In for a treat? Say no more! Date caramel tastes heavenly on top of almond shortcake base.
Date caramel can be made with dried dates. All you have to do is to soak them in hot water for few hours. For this date caramel I'm also using peanut butter but you can use what nut butter or seed butter works best for you. A pinch of salt does wonders for the caramel as it intensifies the flavor.
Short bread biscuit is made from almond meal, potato starch, coconut oil and maple syrup. You can replace the potato starch with corn starch if potato starch is not available in your local store. Before baking it's important to remember to press the dough in to the baking dish tightly so the short bread doesn't crumble when baked.
Before you spread the raw chocolate sauce on top of the bars make sure to freeze the bars thoroughly so the chocolate hardens quickly.
Ingredients
- Shortbread
- 2 dl almond meal
- 1/2 dl potato starch
- 2 tbs cocoa
- 1 tbs maple syrup
- Date-caramel
- 14 dates
- 1 tbs peanut butter (natural)
- Pinch of salt
- 1/2 dl water
- Raw chocolate
- 3/4 dl coconut oil
- 1/4 dl maple syrup
- 1 dl cocoa
Instructions
- Soak dates in hot water and let them soften for 2 hours.
- Set the oven for 175 °C degrees.
- Combine almond meal, potato starch, coconut oil and maple syrup. Press the batter tightly on lined baking tray and bake for 15 minutes or until the corners turn crispy and brown.
- Once the shortbread is fully baked let it cool.
- Start you caramel with draining the soaked dates. Add the dates, peanut butter, salt and water to the mixer. Mix it until it's smooth as caramel. This can take a while.
- Spread the caramel on top of your shortbread and freeze it for 30 minutes.
- Once it's fully cooled, cut it to bars and put them back to the freezer for another 20 minutes.
- Prepare your chocolate and soak your bars on it so that they all get fully coated. Let the chocolate harden and serve. Keep in an airtight container and keep in the fridge for up to a month.
